We have tons of beef ribs from our cows we had butchered this fall, so I figured I’d smoke up some. This was pretty simple and some of the best I’ve done recently. Only took about 4 hours, wrapped half way through and came out nicely. Used my simple brisket rub. No need to over complicate it!

I told the processor that did my last beef that I wanted some plate ribs to play with, but got short ribs? Our wires got crossed somewhere, I reckon.

Those are good! We got tons of both since we butchered two cows. Beef ribs have been kinda tricky for me in the past
 
Maybe shame on me, but I have never done beef ribs. lol
WHAT! dude...try them, they are good! I was looking at the pick thinking "man its been too long"
 
On another note, beef short ribs make an awesome soup stock. It's all my granny ever used for her beef based soups.
 
Nice work on the ribs…..I can’t count how many of this ribs we have done at our house…..we love them!
 
With beef ribs, I find simple is better - just salt, pepper, and oak wood with a touch of mesquite thrown in. Cook at 300 for about six hours, until probe tender. Wrap in peach paper and rest for 1-2 hours, rolled up in a welding blanket, or placed in an ice chest.
