It was a blamy 15* up here today. So I decided to fire up the kettle using the charcoal baskets.
I got these beef ribs at our local Mom-n-Pop store just after the new year for 2.99/lb.
Couple shots of the Ribs:
Just a lite coating of SPOG.
Bacon wrapped stuffed cheese hotdogs: Hollowed out the center.
Grabbed some of my smoked cheddar: That's the tool I used to hollow out the dogs
Stuffed with cheese:
Wrapped in bacon:
And now for some Pork shots to fill the grates: Sliced Chourico sausage and more of the cheddar.

Finally onto the kettle using hickory chuncks:
After a short time:

Sorry I thought I had plated pics, but somehow they got lost. Anyway the ribs were smoked to 165* then placed in a pan with onion soup - wrapped and put back on the kettle till tender. I think it was roughly 205*. I let them sit for a short time uncovered till about 170 then into the unheated oven double wrapped untill dinner time. The pork shots and hot dogs were cooked by eye until the bacon was crispy.
