I am a HAWG MEAT sort of guy but I have been wanting to try beef ribs. I found these center cut ones at my local butcher.. Thought I would keep it simple on the first try so I broke out the Weber Kettle. I used my charcoal method with 5 lit coals on top of a few unlit charcoals with cherry chunks. Dusted with steak/brisket rub and threw em on. Not the prettiest rack but dang it! They were juicy, flavorful and very tender. Steak on a stick! I will do this again soon but may try the big giant beef racks and see how they turn out. This weekend sounds soon enough!

Not heavy with it on the first try. As it turned out it was just right.

Once rolling right, I turn the bottom vent and the top vent to 1/4 inch.
I never touch the bottom vent again and control everything from the top vent.

Looks great, grab some Sucklebusters 1836 and try it on some beef, its really good stuff. have put it on brisket and steak with great results.

Man those look fantastic!! I love both back ribs and short ribs. Love the rich beef flavor. I’ve not tried the Butcher BBQ rubs but have used the injections. Planned on getting some short ribs out of the freezer and doing some this weekend until I bought a ton of butts for $0.99 / lbs.

Those look great! I've never cooked the back ribs .... you've convinced me to give them a try. After all, I have to wait for friends to cook a rack of short ribs ... that's just too much for me to eat on my own. I would mow through those racks you have there!

What temp and how long did they take? I see these thinner back beef ribs at Kroger all the time and I've been wanting to try them. Big dino ribs are hard to come by and expensive!

Wow Hawg, those are some fine looking ribs right there buddy. Great job, especially for your first time out. I certainly wouldn't turn down a plate full of those!!
