I got a smoking deal on some 78% ground chuck at work today.

I usually make my snack stick mix with 50% lean beef and lean pork.

With the higher fat content of the chuck would I have to add pork to it?
 
I usually use 88/12 from Costco, but 80/20 works just fine. In fact, I think the 80/20 sticks to the collagen better.
 
To fattie for me. All beef I use 90-10 or 93-7. I hate the fat feeling in the mouth.
 
80/20 or 90/10 depending on what i'm making.
