at $2.79lb I figured I would freeze and cook them in 2 weeks
no real fat cap unless they trimmed that off...
Did I do ok? I never have cooked beef ribs....
Are these off the backside of a ribeye rack?

Would really need to see a better picture where you could see everything clearly. Lay them out flat on a cutting board or something.
 
Zippy, I see, the bones off a rib-eye steak. I just bought a few packs from our local mom-n-pop store and I paid 2.99 so you did well. Cook them like a brisket and you'll be amazed.
