Beach Trip Pulled Pork Tacos

Hey guys, newbie here to the forum.  I'm going on a family beach trip in a month, and each family member has been assigned a night to make dinner.  For mine I was wanting to make some pulled pork tacos.  I'm wanting to smoke the pork butts ahead of time, as I'm not wanting to haul my smoker down to the beach.  I was thinking of cooking the weekend before the trip, then vacuum sealing and freezing the meat.  My main questions are:

1) Will the pork stay fresh and tasty after a week in the freezer?

2) Should I shred the pork butt before vacuum sealing, or wait until the night it's being served? 
 
Shred before vac-sealing and freezing. Reheat at the party the meat will taste great.

Yes you will be fine. I always have pulled pork in the freezer. Still great 6-12 months later.

I use simple seasonings that way I can use the pork for any type of dish. Adding whatever spice is needed for the dish at the time of cooking that dish.

You can reheat the pork right in the vac bag by placing it in boiling water. I do this when camping a lot so I don't have to clean a dish.
