Hey guys, thought I would share the hot wings I made this Saturday.

- I started with whole chicken wings

- Brined for about 3 hours to get some salt penetration

- rubbed with a Memphis-style BBQ rub

- Grilled on BBQ at about 275 for 3 hours, with Amaz'n Pellet Smoker on the top rack

- Covered in Butter/Franks Red Hot sauce mixture (and a bit of corn starch to thicken).

- Topped with chopped parsley and carrots, celery and ranch as a side to cut the heat.

I've been thinking about doing wings this way too. How did the skin turn out? I have an MES30 with the pellet smoker.

The skin turned out great. it was crispy from the direct heat of the bbq and slid off the meat easily.

I checked the temp if the wings frequently and took them off at around 165 degrees
