Finally found a decent price on some Baby Backs. Decided to cook them on the MES30. Had to cut them in half unfortunately because I decided on the 30. Have had it for 5 years with not a single issue. Used some apple and hickory chips for smoke. Took out about 165° and wrapped with foil. Added brown sugar honey and butter to the wrap. Ran the smoker at 225° for the first 3 hours. Then bumped it up to 250° for the remaining time.

You did a really nice job on those ribs Travis. They look tasty.

They turned out pretty good! I had some company show up when I was pulling then out of the smoker so I didn't get any plated pictures unfortunately

Ah! I figured something must happened that prevented you from getting the plated shots.
Often times, I am starving after a smoke that I forget to get the plated shots.
