Decided yesterday to smoke up a butt for today to eat on while watching college basketball all day. She went for 10 hours at 250 with pecan wood and my own dry rub.

As good as I hoped. Ive always cooked on a wood burner but recently converted a drum style into electric and I must say, it is nice not to have to babysit it. I put it on at 11 last night with a full pan of pecan chips and a water pan and took her off at 9:30 this morning. I wrapped and let it rest for an hour before pulling it. It fell apart off the bone. I started rubbing all of my meat with peanut oil before applying rub and it seems to help it hold its juice and helps form a crispier bark.

My local butcher orders them and halfs them into smaller packs for around $6-$8 each. Will feed around 6-8 people. Perfect for a family size.
