Baked potato hash browns?

Many years ago I worked in a supper club, at the end of the evening we would cool the left over baked potatoes. the next day we would peel them and shred them for the evening meal. We would cook them in real butter in a small cast iron skillet and turn them out on to a flat iron griddle to finish. We would use the skins for tater skin appetizers.
