5 lbs of shoulder and a $3.00 pack of Hatfield bacon... we're up to $7.40.
Ground up, let's say 8 cents of electricity. $7.48

1 TBSP of Kosher Salt
3 TBSP of Sugar
3 TBSP of Corn Starch
1 cup of cold water
All made into a slurry, then mixed into the grind
Add, 20 cents

2 disposable 5x9 pans, $1.06, I think there was tax at the Dollar Store.

Into the oven, in a water bath at 250 F for 3 hours, let's call that 35 cents.

Dispatching the shoulder with a cleaver and ramming it down the throat of my grinder easily made up for the investment.
But so far we're at about $1.52 a pound... still less than half the price of the mass produced stuff, that doesn't make sandwich sized slices.
I think I'll pull 1 loaf an hour early, unwrap it, and finish it in the smoker. It will only be top smoke, but the flavor will be there.
