I'd shy away from 50 Pounds Sterling as well. :eek:
Your BBQ is like what I had in mind for my replacement when my current gas burner is done. I think a Wood/Gas combo could give the best of both worlds.
You must be more careful lovey. When you burn your shoulders, you could also burn your bum, out cooking in the sun with nothing but your apron on.
Not to mention funny tan lines kid. Slather on the Sun Screen! But don't get any on your food! :p

You can always add a little apple juice when reheating to keep it moist.
Thanks for the tip, will try that next time. There were still some pan juices left on the meat that once heated through kept it moist...but apple juice omg why didn't I think of that :rolleyes:

Yep that looks like a good one...thanks for the link saved me having to Google it. I feel like we can't get much choice where I live though.

Hahaha you're too funny! As it happens, I hardly went out in the sun today pretty sure I had heat exhaustion from yesterday :confused: will take better care next time :D

Lol - Texas is one of my favourite states and I love going back there. I worked a lot in Austin and Houston but have travelled around too with my wife on vacation. A few years ago we spent some time on Padre Island - what a lovely place. The only down side to Texas is that the only speeding ticket that I have ever received was while driving from Galveston back to Houston.

My favourite shop of all time... Sheplers :-)
 
So my butcher wanted £50 for a bone in pork butt...hell no! I'm still practicing and don't have the mouths to feed for that...except mine but I'm trying to be good! Haha.

Anyway he said he had some small rolled butts for £4 each so I was cool with that...for now anyway :D

So I'm getting to grips with quickly firing up my pit now, reaching temp, getting wood on and so on. So I smoked these babies trying to keep them between 240°f PT and 270°f PT wrapped at 160°F IT and pulled at 203°F. One thing I did do differently today besides where I got my meat from was use a chip smoking box and I'm not sure if i preferred my foil packets perhaps it's just change, I'll try it again to be sure :) Think I hit a small stall around the 140°f IT mark but it passed. Wind also wasn't on my side today it's really hot in Britain today my shoulders are burnt but my pork ones are good :D Anyway all things considering it was only a 7 hour smoke and I thought it tasted pretty damn great :p

Erm excuse me Mike, I have just headed over to have a look at your butt now you've posted your photos and I happen to think it looks amazing!!

Mines just fancy shmancy plating and yours is all about the meat as it should be...and it's a fine looking meat at that! Well done to you..top marks! ;):D

wade wade I can so relate. The only speeding ticket I have ever gotten myself was a Galveston County Deputy on I-45 near League City! We have some more communality!
