Hello everyone!
I tried something a little different than I normally do yesterday and wanted to share the result. These were by far the best baby back’s I’ve made or had elsewhere.
Meat:
3 racks of baby backs trimmed up and silver skin removed
Prep (in order):
Yellow mustard
Jeff’s rub & my rub mixed 50/50
Light dusting of dark brown sugar
Agave nectar
(all rubbed in)
Smoke:
Pitmasters’s Choice and Apple (75/25 blend respectively) A-MAZE-N-PELLETS
Cooking:
Preheated the MES40 to 275
Put the ribs on the 2 center racks for an hour
After an hour I dropped the temp to 225
No foil, no juice, etc.
Spritzed with Jack Daniels Honey Whisky every so often
Pulled off the smoker after 6 hours
Rested for 45 minutes under a foil tent
(They were hard to move they were so tender)
Result:
Tender & juicy w/o any ‘mush’ at all. Clean bones with no effort.
Sweet & savory bark with a nice smoke flavor through the meat without being too strong.
