My Saturday smoke was 3 racks of baby backs and a 3.5lb pork butt. Ribs were rubbed with a brown sugar rub and butt was simple red Alaea Hawaiian salt.
Two hours in.
At 165 I wrapped the butt in a Ti leaf and Banana leaf in foil. Going for a Kalua pig style cook.
Total cook time was 6hrs. Ribs were not wrapped.
Everything came out nice. Ribs were super tender and Juicy. The butt cam out perfect. Easily shredded and tasted as close to Kalua pig as I can get on a smoker. Really tasty and that smokiness was great. Also liked the smoke ring visual on it.
Sorry no plate shot. Had roasted taters and broccoli for the meal. My brother and good friend were over and a few beers were had!
