Have a brinkmann electric water smoker vertical doesn't have a temp gauge should I put one on or just rely on meat temp ?

Get a dual probe remote therm, like a Maverick 732 or 733.

Then you can monitor the meat & pit temp from in the house watching TV.

Welcome and I would use a temp gauge just to make sure.
