I have heard there is a particular book on kamado cooking from Japan. It sounds like it is true and you had it! So, you do not eat salmon not cooked on a kamado anymore?
 
Don't like salmon.
IT wasn't a cookbook just a manual with instructions on how to set briquettes for your desired outcome
 
Did one similar this weekend only used a small amount of cinnamon (wifes idea) in the apricot. Was quite surprised at how good it tasted.

I make an apricot glaze with soy sauce and garlic for pork, it’s really good to. Great on twice smoked hams.
 
Maybe not the prettiest meal you've cooked but it looks very good to me. I love the idea of the flavor combination you put together for the pork. Sounds amazing.
