I have heard there is a particular book on kamado cooking from Japan. It sounds like it is true and you had it! So, you do not eat salmon not cooked on a kamado anymore?

I'll bet it would be good on ham. And the asian flair would go well with the apricot.I make an apricot glaze with soy sauce and garlic for pork, it’s really good to. Great on twice smoked hams.
