I will be doing my first Comp. KCBS, For those have done a few competions was wondering if someone could give me ideas, what not to do and what works, what they have seen what other folks have done, any suggestions would be helpful
 
Keep it simple. Something with a refined flavor profile like TN BBQ suggested.

On Edit - I originally misread the question...Dang, I think my eyes are getting tired.

I'm not understanding something, then.

I have heard of anything but (pork shoulder, brisket, etc.).

What am I missing here?

Maybe some smoked oysters with some artichokes and with some horsradish and some perm cheese. Now that sounds good enough to make for my cousin who's fling in from New York.
 
I still think the stuffed beef is a good choice.

Folks love seafood.

Take some beef (tenderloin is great, but expensive so you might could even do it with a cheaper cut of meat)

butterfly the beef and fill with seafood mixture (maybe cream cheese and herbs).

Roll it up and cook. Add some sauce of some sort
