You going to use cure and make sausages? or just use some seasoning and make patties or something? patties are good for a test of flavor..
 
I was thinking of maybe making some fresh sausage and maybe some smoked sausage. I picked up a 10lb pork butt yesterday at $.99 a lb. So maybe make a cpl lbs smoked and a cpl lbs fresh.

Fresh is good too.. I grew up on fresh sausage and kielbasa. we never made it with the cure in it or smoked sausages. My mom didn't buy the smoked stuff much.. only bacon and pork chops for making scalloped potatoes or something.
