Made an online purchase from Bass Pro because they didn't have what I wanted in stock in Hampton, and ran across this. Full disclosure, not a paid shill for Kosmo's. I love the cherry habanero sauce they make but figured I'd give it a shot. Im rolling the dice on the alleged 50% chance of rain and tossing some wings on the kettle to try it out.

Bingo! That's it. The vanilla caught my eye, and I've used tamarind quite a bit making bbq sauce. Lazy now so here we are!
 
Heading out to Publix today as they have a BOGO on the Kosmos Q sauces and Wing Dust!
Also use them as toppings for smoked cream cheese.

I’ve played with vanilla in some sausages. It’s crazy how it can bring flavors together, if used in the proper amount it’s that one ingredient you can’t quite put your finger on but you know it’s there somewhere somehow.

I’ve played with vanilla in some sausages. It’s crazy how it can bring flavors together, if used in the proper amount it’s that one ingredient you can’t quite put your finger on but you know it’s there somewhere somehow.
Yep... and that's pretty much the deal here.
 
IF you're ambitious, I found this

Cherry Habanero Hot Sauce

Ingredients:

  • habaneros, 200g
  • cherries in heavy syrup, 425g
  • salt, 0.75 tbsp
  • allspice, 0.5 tbsp
  • ginger, 20 g
  • apple cider vinegar, 200g
  • water, 200g
  • sugar, 1 tbsp
  • dash of xantham gum (optional)
Method

  • remove seeds from peppers and peel ginger
  • combine all ingredients except xantham gum and blend thoroughly
  • simmer covered for 10 minutes
  • strain
  • adjust seasoning for salt, vinegar, and sugar to your tastes
  • optionally, blend in a small dash of xantham gum

Now, he's using this as a pizza sauce. I think based on the ingredients used, it could be used .....otherwise.

NOTE: that's almost a half POUND of peppers. That is a lot....

Here's another one (vid) so have a pen and paper handy to write down quantities

Pepperscale is a place I've somehow not cared for. Hard to describe but it never held my attention.
