Hi, my name's Matt. I live in central North Carolina, but I'm a relocated Yankee so it was only in adulthood that I learned that barbecue doesn't mean grilling burgers and dogs.
I've been lurking on here a while, learning lots already. I've tried a few cooks on my Weber Kettle with varying success. I've got three young kids and sometimes it feels like we're living in a sitcom about overwhelmed parent, so I needed something more set and forget.
I picked up a Camp Chef Smoke Pro pellet grill. I've messed around with a couple different cooks, I think I like it but it's a whole different way of cooking.
Tomorrow will be my first real smoke on it, classic pulled pork. I'll try to post a qview, mostly to invite constructive criticism rather than show off my minimal skills.
Looking forward to learning even more from y'all.
