Weisswurst, pretzels, mustard and beer.

Weisswurst was very good.

Bought it at Wegmans in Syracuse.

Casing peeled of no problem...

Tomorrow is my Gepockelte day,
Might be doing the same . I bought 2 whole loins , and still need to break one down . Was thinking a thick chop , TQ rubbed for a couple hours , then smoke with some Beech pellets .
Might cut one 4" thick and butterfly .

Sounds great.

I grabbed bone-in thick chops.

Will have on a bed of sauerkraut.

Going to try to experiment with making semmelknödels out of stove top storing.

Should be interesting.
 
I now have a craving for pretzels! Not sure about weisswurst... never had it!

Your post are really getting me thinking as they all look great.
I wish I had starting sausage making with my father in law, but he passed 5 years after I married into the family. Inherited his sausage stuffer though and I love that old cast iron beast.

Tonight's German themed meal.

Gepockelte

Thick cut bone in chops, cured with Tender Quick, 1 TBS per pound for 18 hours. Browned in bacon grease...


Placed on bed of Sauerkraut and baked at 350 until internal temp was 150

Served with

Semmelknödel made from Stove Top Stuffing mix... substituted milk and egg for the water and butter.

Very, very easy and tasty meal...

Never heard of it. I looked it up. Seems similar to Panhas.

Has she heard about that?
