Tonight's German themed meal.

Gepockelte

Thick cut bone in chops, cured with Tender Quick, 1 TBS per pound for 18 hours. Browned in bacon grease...


Placed on bed of Sauerkraut and baked at 350 until internal temp was 150

Semmelknödel made from Stove Top Stuffing mix... substituted milk and egg for the water and butter.


Very, very easy and tasty meal...

That looks amazing , I could hoe into a big plate of that ( except the sauerkraut ) just double up on the Semmelknodel, as it sounds great also

What an incredibly small world - I'm based in the UK, but i have a friend who works on the meat counter at Wegmans, Syracuse - she could have sold you that sausage!!
The Wegmans I bought it at is actually Fayetteville.
 
My wife told me to ask you guys if you like knipp. Her mom and brother make it about once a year.
Never heard of that myself. Seems like a german style scrapple.

OOOH, good hack! Here's mine. Storebought gnocci for spaetzle.

Had to finish the leftover semmelknödel and sauerkraut. Tonight was Knackwurst.
Got the Knackwurst at the commissary. Brand was Schaller and Weber. Very good.

Finally got to mine for lunch today .
TQ rubbed for 4 hours , then rinsed and reseasoned without salt .
Ended up sitting in the fridge for another couple days .
Used the Genesis to grill hot and fast .
Reeds canned German potato salad and some Dietz and Watson kraut .
