I asked the Mrs if she would rather have a shoulder butt or a brisket this weekend and she said "How about a chuck roast?". OK....
I said I'd like to cook to pull and have BBQ sandwiches, she said she'd rather have it sliced with potatoes & green beans. OK...
You see how this is going?
We decided on a compromise. I'll cook to pull and when it's done we'll tear a chunk off to have with green beans & taters tonight and I can pull what's left.
I had a nice 3 1/2# piece. Slathered it with Lea & Perrins Bold and coated with my beef rub last night to rest in the fridge.
It went into the offset at 11:30am with the smoker running 150 to 180.
At 1:15 it hit 150 and got foiled. Just watching it now, adding a stick now and then and enjoying cold Bud & a beautiful day [emoji]128522[/emoji]
More to come...
 
Forgot to mention that it was liberally injected with Tony's Herb & Garlic. Sorry.

Actually sliced nicely. I thought it would be falling apart, but not so. I'm thinking it was a pretty lean piece compared to the chuck I usually get. No problem. There wasn't enough left to bother pulling, anyway.

Actually haven't had a chance to pull one yet, Al. The Mrs always wins the toss LOL!
Next time I get a twin pack from Costco I may just have to make both of them, one to pull & one to slice ;-)

Well, you certainly nailed that one.  Looks great--juicy and very tender.

I didn't inject my last chuckie and it was dry--I'll be injecting the next one for sure.

And yes, its a wise man who makes what his wife prefers.  LOL

I usually make my chuck roast into burnt ends, hmmm.....maybe try a pulled one next time.
