AMNPS+Pecan Pellets = What should I smoke? Your input is appreciated

I just got my pecan pellets from Todd at A-MAZE-N products. The last time I smoked with pecan was with wood chips before I had an AMNPS. I remember pecan being somewhat mellow and loving the smell, but I don't remember what meat(beef, chicken, fish, bacon, cheese) it gave the best flavor to. I filled up the AMNPS, she's just waiting on something to smoke.

I'm hoping the members of SMF can give me some suggestions on what to smoke with my new batch of pecan pellets.

Pecan goes good with anything. I use a combo of oak, hickory, and pecan for almost everything I smoke.

The red meat goes with pecan to me.
 
I use Pecan a lot on Chicken and Cheese. Great flavor combo with apple too 
 
I vote for what ever you want. My limited use of it has been good on poultry and cheese  post Q-view on your smoke
 
For the life of me I can't remember what I used it on when I used it in the past. I was thinking maybe fish or some seafood.
 
I wanted to use my new a-maze-n so bad the minute i got it that I did some sea salt to see how the smoker worked on a cold smoke. Turned out so much better than the batches before when I fought with my chips burning or having to tend to them all the time.
 
Pecan goes good with anything.....

It's a little stronger than Oak, but not as strong as Hickory.

I mixed it with Apple and really liked the results

Just watched a episode of DDD where the pit master did some Mahi Mahi...Looked pretty amazing...JJ
