Scratching that itch!
Gotta have some Al Pastor every so often.

I don't have a rotisserie, much less a vertical rotisserie, so I make mine on the grill.
It's not hard to make a reasonable copy that is close enough to calm the cravings.
Just need some pork steaks, butt cuts are good for their fat content as they don't dry out while getting a good char on them.

Chile's Al Pastor Marinade/Sauce
1 28oz Red Enchilada sauce
2 20oz cans of crushed Pineapple
1/3C Vinegar
1/2C Brown sugar, add to taste
5T Guajllo chile powder
4T Achiote powder or paste
2T Garlic, minced
2T Paprika *optional
2T Salt, add to taste

Warning!
This makes a LOT of marinade, you can easily marinate 8-10lbs of pork steaks.
You can cut this in half or just freeze half.

Put everything but pineapple into your blender and puree into a very smooth sauce.
Pour sauce into bowl or bag and add crushed pineapple and juice, mix well.
Taste to make sure it has enough salt and sugar, add as needed.

Marinate pork steaks overnight, 12-18hrs.
Grill and baste with leftover sauce.
You want to get some really good char on the steaks.

Out of the marinade and on to the grill.
