Our local butcher has a quality brand of pork called Prairie Fresh & he freshly slices pork chops each weekend. It's divine.If bone in pork chops, i season and cook hot and fast like a good beef steak. Except let it go to 142 degrees for pork chops. They are delicious.. I’ve been eating more pork chops than beef ribeyes with todays prices and inflation. One good thing about this mess is that it’s opened my eyes to more pork options. They are very tasty.

Are you talking about thick pork chops or a butt cut into steaks ?Have a few pork steaks to do tonight on the pellet grill. They are 3/4”.
