ABT's and Garlic Habanero Honey Pecans

While doing my oxtail yesterday I made up some ABT's. I been using SmokinAl SmokinAl way off cutting peppers. Great idea Al

Cooked up some sausage and added some cheddar.

Stuffed peppers than put into fridge for a hour to set. This makes wrapping the bacon so much easier.

This thick bacon I got from Adli was short and was not able to get them wrapped up as good as usual.

After oxtail done cranked up smoker to 275 and smoked for 1.5 hours.

Did not get as much bacon coverage as usual but still be good. Be taking them to the river today.

And my pecans. Here is the link to recipe. I wish I could edit it but I started using the convection setting. Gets the pecans a lot drier but some like them better sticky. Some times one pan will take longer. You want them to brown and even a little burn is good.

Heck yeah, Brian. I love the jalapeno boats. I like the pecan idea, but not sure if my zoo could stand the heat, especially the head zoo keeper...my wife...
 
Your peppers look great. If you have thick cut bacon, just put plastic wrap on it & pound it out with a mallet. It actually comes out better that way than if you bought thin bacon.

Nice Brian, the guys at the river will be happy!. I made honey roasted peanuts with one of jcam222 jcam222 ghost pepper infused honey (batch #2). I will try and post up later or tomorrow. need to do some abt's this weekend.

Another idea on how to stretch the bacon. When I make bacon weaves I lay the weave out in-between two pieces of parchment paper and use a rolling pin to tighten up the weave. It flattens it out some as well as keeping a uniform shape.
