Got rid of all my larger stuffers years ago. I only use a LEM 5lb. Not a task unless you make it one...EH

If you can do the bear dance and make the chubs grow legs and they can walk up to PA then prob not as i have no plans to go back. :cool:

Going with 5lbs of dry SS first.

Mixed last night so stuffing on Wed morning.
I need to get a brisket to do the pastrami SS, These will be done later in week.

Deviated and doing the 5lbs of shelf stable SS first.

Some 1lb chubs of shelf stable SS being stuffed and in the smoker.

Heat for now at 135 for a while then some smoke later.

My TSM smoker is PID Controlled.

Yes the best electric smoke i have used, and i have used them all.

Yes with forum help i wired my element to a heavy 12/2 cord and use my PID. The element in TSM smoker is 1000w

Rick, about how large is the air inlet for the TSM smoker? I'm wondering if the inlet I made on the bottom of my customized MES30 housing is too large. Just curious about the TSM inlet size.

Looking down from the top. Stall time.

Took the chubs to 148* and hung. They got to 150* on their own hanging (no cold water) or they wont IT.
Hang time will vary for what i want. Shelf stable will be a 17-18% weight loss. Dry/hard style will be a 30% weight loss. Will weigh in a week and record on the tags.

As usual the Amazn tube worked great.
My wife said in this pic it looks like a piece of glass in front of the smoker with a bullet hole in back. Weird because the vent hole is on the side at the bottom.
