Hi everybody! I have been a member here since 2007, posted a couple times when I first started that mostly trolled for the last 4 years. I was smoking meat the whole time but other commitments and other things in life made it tough to be an active member here, plus I was running a dinky little smoker and was a little intimidated by a lot of other peoples big rigs(silly I know). I recently decided to up my smoking game and picked out a Char-Griller Smokin' Pro. It's quite a big step up in size from my Char Broil American Gourmet and I definately wanted to try do things more by the book, instead of wingin' it like I did with the little guy. So I checked out the neccesary mods and giving it a go. I'm very nervous about the SnP even though it's basically the same design but because of the size difference and trying to keep temps up, not a problem for me on the little guy, after 4 years I had it down.
I can't remember why I bought my first first smoker, I had no idea what I was doing, using garbage briquettes I bought for a dollar a box and all other sorts of trials and tribulations, but you fine folks here have helped me a great deal, from what type of charcoal to run to what a chimney is and how to use it, rubs and brines to temps and times, I've gotten nearly all of my information from the SMF. I know taking up this hobby has helped make my life better, I used to be an alchoholic and I quit drinking in early 2007 and smoking on the weekend was something I used to keep me at home and and away from the types of places where I would get into trouble. I've matured in the 4 years since I quit drinking I've went from being broke with a terrible dead end job that I hated and being 300 pounds to having a job I love, I've lost 80 pounds, own a house wife my beautiful wife and am celebrating my first fathers day with my 2 month old baby boy. Sorry if I got a little to personal there.
I'm just a back yard bbq warrior, but I'm getting the hankering for a little competition, I know it's not something I can just jump into or probably be any good at, but I don't want to compete for the glory, I want to compete so I can surround myself with people who have a passion for what I have a passion for. My rubs are probably to standard and ribs not moist enough but when I smoke for friends, family and co-workers and everyone is sitting at the table eating and there is pure silence, because everyone is in a meat trance, nothing sounds sweeter. There are not many southern style rib joints up here in the prairies of Canada, one opened in city a couple of years ago and they are busy because it's delicious food, but you can still tell it doesn't have the love of a backyard smoke, and so when people get a taste of what I make, even if it's not competition quality, they still fall in love with it. Sorry this was a little long winded, probably not formatted right and full of spelling mistakes, but just had to put my feelings out there about my life, this place and my love of the journey of the smoke. Thank you for your time.
