A pot of water heated to about 170F
I don’t let it cool below my target IT of about 150 and I don’t let it go over the 170. So it’s on and off the burner, but the sausage comes to temp pretty fast, within 30 minutes usually.
 
And you can add a can of beer and some butter and maybe some sliced onions and/or a shake of hot sauce to your poaching liquid too.
 
Poaching is basically simmering something submerged in liquid below a full boil.
