Quick question ; Never finished sausage SV. Doing brats (29-32mm), if I get them to about 130° after approx 4 hrs smoke and want to get to 151°, (per chart 1 1/4 hr.)
Do I still need to go the 75 mins? Going to SV naked so don't want to poke more than absolutely needed.

The beauty of S.V. is that you can set your target temp and it will never go over that.
If you want to go to 151 just set the S.V. for 151. Never mind the minutes....

The minutes will matter. If set at 151°, sure the water will get to that temp and stay but how long is it going to take to get the internal meat to that temp is what I am questioning? Chart is 75 mins but sausage after removed from smoker is (hopefully) already 130°.
So how much time does it actually take to get the sausage from 130° to 151° internally at water temp of 151° ?
 
That's a great reminder, I just did this on Easter! It really didn't take that long.

I took my sausages out of the smoker temping around 132-134°F and put them in the bath at 152°. Went back and checked on them about 25 mins later, and they were already up to temp.

If I recall, the Baldwin chart is the time to get to temp starting from 40°F.

Starting at an IT of 130, go no more more than 20-30 minutes in SV. It’s powerful.
