Brine it in an apple juice, soy sauce and what ever seasoning you like. Smoke at 250* until about 165 for safety. The skin won't be crisp, but you can crisp it up on a hot grill or under the broiler.

Yep perfect way to do it.
If you want to get that skin nice and crispy i recommend frying it fat side down in duck fat.
