Had a duck breast in the freezer and was going to do another prosciutto, but I ran across a recipe over at wurst circle and decided to run with it. Lightly spiced with pepper, ginger, cloves and cinnamon. I was initially concerned about the level of salt but in the end it tastes incredible and nothing over powering.

Cured for 8 days and into the smoker. Dried it for about 30 minutes at 120 before putting the maze in and turning up the heat to 175. Mix of cherry and pitboss fruit blend dust. Used about a row and a half and took it to 142 IT. I'm surprised the smoker kept up as cold as it was here that afternoon / evening.

Smoke gave the meat a deep exterior color.

I gotta tell ya, that stuff is so tasty, from now on I'm going to do a few at a time. The fat is beyond decadent and the spice profile subtle, as was the smoke. Slightly hammy from the cure but I'm loving this stuff.

The only duck I had was very dark and dry with lots of pellets in it, this looks much better.

And the inspectors are wait for a signal, or a floor find.

Thanks, David! No pellets in that one and in no way dry. I picked them up at the Wegman's in Va Beach with zero shooting required. It's a D'artagnan Moulard Magret duck breast. And yes... those two are always under foot when food is even talked about.

my son worked at a frozen food hub years ago. when a create got damaged it was set aside as no good. well that happened to a huge box of ducks!! i got to play with those ducks for months. people would take one or two a week. very few workers there and lots of young guys that didnt cook so they lasted. was like having my own personal stock pile. i got good at turning those things into finger licking heaven!!! brined and smoked with wood. man are those good eating. and yes that fat is amazing!

I hear you on that Chris, Loved my girls and down to one that is a quite and shy one, miss Gabby ( my avatar ) she was like the little boy I always wanted . My son hates it when I say that.

Never had duck myself , but I would love to have some cured like that . Looks fantastic .

Thanks, Chris. It turned out quite nicely. Can't wait to do it again. Maybe try some different spices, but that profile sits well with me so maybe not.
