I had enough of Joe's (Boykjo) Jalapeno and Cheddar Kielbasa seasonings left to make another 5 lbs. Last batch I didn't add the jalapenos and cheddar, but I did this time. 

After mixing and sitting in fridge to meld the flavors and cure


4 oz diced jalapenos and 1 cup diced sharp cheddar


Stuffed and cold smoking 3 hrs with some JD Oak Barrel Chips and Apple


Finished!


These are headed to Nebraska!

Alesia, how long do you cold smoke them for and what temp does it have to be outside? I want to do some reg sausage links that I can remember when I was a kid they were cold smoked in old wood smoker with pot at bottom and sausage hanging every where.

Just this week, I've made 10 lbs of the kielbasa, smoked two 8.5 lb pork butts and pulled it, homemade butter, 2 cheese balls, smoked 5 lbs maple bacon, smoked a boneless ham, made Amish White Sandwich Bread and rolls, cinnamon rolls, Shrimp and Sausage Creole (2.5 gallons), 2 gallons Smoked Three Bean Casserole, Strawberry Dessert Pizza, Carrot Cake, 12 loaves of various flavors Amish Friendship Bread. I still have 3 pans of brownies to bake and frost, chocolate chip cookies and 3 dozen ABT's to make and smoke by tomorrow evening! But I am so looking forward to nothing but vegging out for a couple days as soon as he leaves!

Thank you! I forgot the 3 dozen hamburger patties and 3 dozen elk breakfast sausage patties, 2 lbs of homemade butter and the shopping that had to go with it, plus I had to pack all his stuff (except calls etc). He left at 3 AM this morning and I'm just vegging for now. Luckily I didn't have to smoke cheese cause I had already done that! And believe it or not, he still expected dinner every night and his morning break and lunch packed! Imagine
