Morning folks, a couple nights ago Ann said she wanted Rosemary pork chops. And I didn't see a problem with that! But, I didn't want them the usual way with cuts of pork loin sliced thick. So I grabbed a pack of tenderloins from the freezer and thawed them out. And gave them a nice rub of Rosemary, SPOG, and paprika. And then got them tied on a spit for the 360 rotisserie. After letting them rest for a couple of hours I got them going at 375 until they hit 145IT.
Man! Did the kitchen smell good! I also made my aunts "ruint" beans. As she called them. Delicious. And absolutely devoid of any of their usual healthy characteristics. You take 3 pounds fresh green beans. Or frozen. Which I did here. Fresh were 6.00 a pound. So that wasn't going to happen. Toss in a crockpot with a pound of crispy thick cut bacon with a diced med. onion sautéed in the bacon grease. Put that grease in there too! Add enough water to just cover the beans. Then salt and pepper to taste. Put the crockpot on high until they start to boil. Then lower to medium and kill them beans! Cook for 10-12 hours.
I do the beans in a 2 day process. Cook until almost done the first day. And finish the next.
Plated shot. Yeah, not from a 5 star restaurant! I did some nuked stuffing. Sliced the pork and threw it in the same dish the stuffing was cooked in.
Yup, I was ready for bed after this. I'm taking some of the beans and pork to work for lunch today. Reheats just fine.
