My buddy wanted to do some pulled pork for Monday night football, sure, since I'm going to have it fired up wife said to do some steaks as well, sure! He shows up today with the shoulders, notice the plural! He went to Sam's and brings me two 10lb shoulders! Not quite what I was signing up for, so tomorrow is going to start a lot earlier than I'd planned! I was thinking the Dillons 6-7lds. Well, since I'm on here running my mouth, but have yet to post any pics, I'm going to try and provide some Q-view for once! Might not get much on the start as it will be dark, but going to try to get some pics and a little play by this time. So here they are trimmed and rubbed, cut about 2lbs of fat off of each. The one on the right is just Head Country Championship seasoning. The one on the left, I'd tell you, but... So the plan is to start 4am/ish, and I think I'm going to shoot a little higher on my temps, 275ish, to push them through so they have some rest time. I am NOT a morning person in any way! 4am is when I like to go to bed! So we will see how it goes! If anyone has suggestions on how long the filets might take, I'm all ears, and I'm curious what else may end up over here needing smoked in the course of the day! Thanks for looking and wish me luck!
