Got my MES 40 from Sam's Club a few days ago. Christened it this AM with 3 racks of spares. nothing fancy rub-wise; garlic, onion, salt, pepper and on one rack some KC spicy rub I have. Came out great! Did a 3-2-1. But it was more like 3-3/4 - 2-1. I had a bit of a learning curve getting my AMNPS to stay lit. The lesson? ...RTFM!:biggrin:

Yup.  Clearly says Cherry can be hard to keep lit and to put it on top of Oak or another easier burning pellet...  Could have saved myself 2 hours of frustration!

Those look tasty, and lots of pullback too. I just got a amnps and cold smoked cheese with some cherry, didn't have a problem staying lit, we'll see how it does with a hot smoke.

Cooked it at 215.  Did a 3-2-1, but the 3 was more like 3-3/4.  I had trouble using the AMNPS at first and had to keep opening the door, so I went a little longer.  Came out great!

Great way to break in your new MES

Yes, cherry pellets can be difficult, and I'm not really sure why???

I figured this out early on in my testing, but rather than dump the pellets, I figured out a way to make them work.

Next time, try a mix of Hickory and Cherry

Now that you have passed your reading test, all your future smokes will be awesome!!
