I brined my bird over night. Got up this morning and got a fire going in the big smoker.

Drained her out then rubber her up and into the smoker. Smoker is running around 300

Here it is after 1 hour.

and after 2hrs. Shes getting a bath in Apple Juice this time.

That is all for now.

Ill update this in about a hour or so. At this point ill drop the smoker temp down to between 225-250.

Well all I can say is WOW. I cooked this on the RF smoker that I made and man that thing cooks like an convection oven. 16lb bird done in less than 3 hours. I checked at the 3hr mark and the breast were at 166 and thighs at 180. Thankful for the brine because its still nice and juicy.
