First cold smoke

So the weather was perfect for a cold smoke. High of 37 on Saturday. Got some blocks, cut them in half and on to the wire rack. I was concerned about air flow, so I cleaned out the burn pot and the auger system of any pellets. Kept the pellet bin door open and took the deflector plate out. Used two tubes of comp blend pellets. One tube on the grate next to the cheese, the other down below, leaned up against the burn pot. Got TONS of smoke. Somehow the lower tube got hot enough to burn a corner of a cheese. Left on for 2.5 - 3 hours. Still had plenty of pellets left so I threw a pot of pinto beans on. Hate wasting good smoke. I think, except for the overdone bits, it turned out well. We'll see in a few weeks.
