Wife and I made real dent with sandwiches. “Hot Pastrami Specials” (warm meat, with cole slaw, and Russian dressing on pumpernickel/ rye swirl bread), sorry no pictures. Too busy eating.

The pastrami came out great. Way better than Katz’s in NY (overrated anyway), but not up to the Romanian in Chicago, but equal to Ben and Irv’s in Philly.

Modesty and humility are some of my more outstanding traits!

And did you cut that just with a knife? You really did that pastrami justice. Perfectly cut.

And yes, just used a knife, like the texture better. And I don’t have an electric slicer or a place to store it.
 
Dang that looks fantastic my wife has been laughing cause I was wiping the drool from my chin. Now I will have visions of dag wood sammiches dancing in my head tonight.

You certainly can, but the flavor (and I’ve done it too), just won’t quite be the same. But it will still be delicious.

Great looking Pastrami and I am impressed that you mentioned the Romanian Sausage Company in Chicago. We have had some of the best Hot Dogs, Salami, Corn Beef and Pastrami from this place . They now ship their products after many years of not doing so. There products are the real deal!!
