    The instructions say to use only chips in the tray. Would using an pellets with Amnps inserted on the left do the same as using chips? I was thinking of also doing the mailbox mod to this for cold smoking cheese, etc. Anyone done this on this smoker? How did it work out? Thanks.

    My first summer sausage

    80/20 beef to pork. I estimate about 90% lean. gas vertical smoker at 200 (lowest it would go) for just over 2 hours until internal temp was 155. Sausage came out good.     I want to try my hand at both lox and nova. But since nova is cold smoked, do I have any other options in the 90+ heat we are getting in south Florida?     First try at smoking cheese

    72 degrees outside grey clouds and light rain off and on. Front to back mild cheddar, Montery jack and colby. Apple pellets in the Amazn. 3 frozen water bottles in a zip lock bag to help keep cooler. I will pull some at 2 hours, 3 hours and 4 hours.

    First Pork Shoulder in the smoker

    Smoking at about 235, at 5 hours hit about 150 internal, not at about 6 hours up to 165. Last photo at 5 hours when I threw in some more hickory chunks.

    Dried jerky to long. How do I save it.

    I made some beef jerky and left it in to long. Now it is way to dry. Not chewy at all. I tried putting some in a sandwich bag and that in a gallon zip lock with a wet paper towel.     I don't like to just throw stuff in the trash to go to the land fill. I have a small vegetable garden that my grass clippings, etc go into to break down. Can I do that with the chips and chunks that I have used in the smoker and are now all burnt?

    Just bought my first smoker.

    I bought my first smoker yesterday. Master Forge at Lowe's. $148.00 minus 20% due to using a 20% off coupon from harbor freight. Yes, Lowe's will honor competitors coupons, including the one I used. Just made some fish for smoked fish dip and will make a top round with a rub for dinner.
