    Love my MES, Best thing I have ever Owned!

    Add the ANMPS, and you can't go wrong! Smoke anything, cold or hot! Read the pros and cons, mostly Pro's. I have smoked for years, and this unit makes my life a hell of a lot easier!

    Baconator Day Smoked the loins, sliced. a nd vacuum sealed, found some pork bellies, 1/4 inch sliced, dry brined, 1 week, Only black pepper spice, In the MES for a few hours, anmps, i/2 row, pulled, cut, and into the vac bags. Of course had to eat some, not too salty, not overly smoky, sweet...

    Our Superstore in Leamington, Ontario has bags of Easy Cure. I believe it is the same as TQ. They bring it out when their pork legs and shoulders go on sale for sausage season.

    Pellet smoker VS Bradley smoker?

    Hated my Bradley, pucks got stuck, half burn't, did a pork shoulder and grease was running out the bottom. terrible temps, used a couple of times, cleaned it up, and sold it online to someone else. Lost money, but learned that sometimes we learn from experience.

    I don't get too much smoke going, just a couple of small hickory sticks. Generally the top vent has pretty clear smoke by this time. Never had bitter smoke on my UDS. I always get her hot first. (The UDS, Not the wife!)

    Love primes on the UDS. You can't go wrong if you start high 350, and bring it down to 250 as soon as possible, and finish it med rare or less. Some of the best beef ever!
