Well, I got the 40 pounds of bacon done sliced up and all wrapped up. Tried some this morning and it was absolutely amazing.,,, I did 19 days of it being in the cure. (Used digging dog farms bacon calculator) Then 3-8 hour cold smoke sessions and then it sat in the fridge. Uncovered for 1 week...
Started Curing approximately 40 pounds of bellies this weekend and playing with the grand kids. We did black pepper,, white pepper, garlic, Chipotle and plain.,, This will be cold smoked in about 2 to 3 weeks with apple and cherry pellets.
Well after having the the New style 5lb Lem stuffer I was so impressed I bought the 15lb when they had it on sale last week. Can't wait to use it,,, But I need to find a 3/8" snack tube for it,,, the tubes for the 5lber won't work on this one. I am trying to post pics just hang with me on that part.

Each batch called for 12 1/2lbs of meat so each batch got 8lbs of Elk and 4 1/2 lbs of pork butt,, 3 batches
