Another 25lbs - 2 flavors

Well, my arm and shoulder had it's work out for sure for the last two weekends but well worth it. 

Last weekend as some of you may have seen that I did 25lbs of snack sticks and 10lbs of summer sausage, we this weekend I did another 25lbs of snack sticks,,, 50lbs of snack sticks looks pretty nice in your freezer when you are all done. 

Here are the victims this last weekend. 


Here is 121/2 lbs done, I thought I was in trouble with my casings,,, I bought a caddie 21MM from butcher packer last yr and never vac pac'd them after opening and last weekend the were very brittle,, I PM Nepas on if I could save them or not and tada!! he told me to put them in the fridge with some water and get the humidity up and so I did and left them in for a week and they turned out great. - On the first batch, I could not stuff 12" with out one breaking but after the conditioning in the fridge,, I did all 25lbs without a blow-out one.... Thanks NEPAS!!!

So, I used pint bags, each bag contains 6 - 6" sticks and 12 1/2lbs will get you about 16-18 packages,,, Perfect size to throw in your pack or a lunch box for the day

I have a lot of folks wanting me to do their wild game for them so I am sure Dec and Jan will be busy making snack sticks for folks,

Looking good! I have used the Chipotle wildfire seasoning before but never the 7 pepper. Is the 7 pepper a lot hotter? The chipotle has a good spice to it but would like something more spicy.
