I was playing around with my favorite cool weather meal of all time, a grilled cheese sanny and tomato soup. I had not fired the Old Girl in a while so I made a nice bisque (cream of tomato, basically) with Roma and Beefsteak tomatoes and put about 8 cups of it into a steel bowl and smoked it...
I can't find one here, maybe the search function is steering me away. I defrosted a bunch of stuff including bacon and want to make some pig candy. Anyone have a recipe?
I hear it's gettin' a bit chilly up there
I hope this is the righ place to put this. I posted it in a response to another, but maybe it'll get some exposure here.
INGREDIENTS:
1 pound mild sausage12 ounces dark beer (stout if you like it)1 large white potato, chopped1/2 pound cheddar cheese...
I smoked some stuff with my modified Masterbuilt, I removed the shields and all and just put wood on the element. I opened her up and removed the food and walked inside, leaving the door open. Idiot! The hickory got a big breath of oxygen and went up in flames, boiling the water pan and staining...
Please buy another box and some stamps for the men and women who put up (didn't shut up) for our warm safe homes and are lying in beds away from their families. Thank you.
Please remember those who are in a hosital bed who fought for our warm cheery homes.....
I've been told this will not...
There's a thread elsewhere about wireless transmitters failing after just a few smokes. I've done 5 smokes with the Maverick 73 (I won it here! Thanks again) with zero problems. Anyone notice early failures with them? Oregon Scientific came up a lot too.
Tricks to extend the life of them??
Wow this little catagory hasn't seen any action in a while!
There's a two-camp thing on whether to stab meat with holes before grilling to tenderize, or let marinade in it.
One camp says use a meat fork or a fancy tool and poke holes in it, it lets the marinade in and makes the meat tender...
I had a heck of a time with two butts a few nights back, they stalled at 152, it was late, I tried to cook them off in the oven, then I got "tired" (yeah, tired) and turned off the oven and went to sleep. Next AM I still didn't want to feed anyone this stuff because I never saw the meat get to...
Hey guys, I got my Maverick remote smoker thermometer today for winning the "photo new term" contest. SWEET unit! This is beautiful, thank you very, very much to the "Cabinet Members" of SMF.
This is a Kentucky favorite.
Banana peppers are a Southern favorite and you can fry them either fresh or pickled. This is a perfect accompaniment to roasted ham or fried chicken. Since banana peppers are mild, use yellow wax hots for spicier fried peppers.8 pickled banana peppers1 cups flour1...
Cinnamon-Coffee Rub
This is to be used on chicken leg/thigh pieces. I've used on those, plus last nite used it on just bone in thighs. The jury's still out on whether to do strong brewed coffe or dry, finely ground (Turkish). The wet coffee will help NOT draw moisture from the meat.

This recipe is from a restaurant here. They serve them as a appy and they are spicy hot and compliment smoky food quite well (it's from Meteor Smokehouse BBQ).
MINNIE'S BEANS
*Sautee chopped onions and sliced/diced red & green peppers, set a side (I add a little garlic)
*Clean & dry some...
I'm SO PO'ed.....tried a stuffed one and it just fell totally apart when I tried to roll it up. It flattened out to an oval about 10 by 8 inches, I put a good bit of stuff in it, and it stuck to the wax paper, tore up and it's in the trash. Man, I'm disappointed, I put good stuff in there.
Despite the famous bar by the same name here, I tried smoking Sloppy Joes and they were quite good. Made the recipe according to directions but made the mix a little soupy or thin to accomodate the additional heat and cook time for smoking. They came out very nicely after only 30-40 minutes of...
This is a different version of baked oysters. These can be enjoyed while other stuff is smoking, or you can just toss a handfull of chips on for a tiny smoke (it's real short)
Place the oysters in a large bowl or pail. Pour a large bottle of club soda over the oysters, and let them soak for 20...
I'm doing some meat loaf tomorrow and will have some burger left over. I'm chancing it and trying sloppies, what the heck, maybe I'll strike gold. I guess I'll mix it and put it in raw, rather than browning it first, and bringing it to 160*. See what you people have done to me?! Dammitboy!
I took the stainless chip drop tray out of my MES, exposing the element and giving a lot more vertical room over it for chunks. I remember a poster saying just rest a 6" cast skillet right on the element, but right now I don't have one. I wonder if I can use a foil cupcake pan, or double wrap in...
The carolinas have at least 4 different, distinct sauces in just two states. I enjoy eastern NC, which is butts or shoulders to 200*F then chopped to about 1/4 to 1/2" pieces, it's the exact same flavor as pulled and a lot easier to do. Their sauce parallels SoFlQ's sauce. Pour some in to the...
Anyone have a surefire faster way to do butts, maybe at 250 or so? My neighbor requested me to do 20 lbs for a party tomorrow at 5, and its 4pm here the day before. All this plateau talk is making me nervous. I have (2) 9 pounders and want to pull/chop them. I also don't want to babysit my MB...
