Well... I'd say they turned out pretty good. The kids came by with the grand babies and snarffed up most of them. My daughter said that they tasted like the turkeylegs at Disney World. LOL I guess that a pretty good complement. (shrugging shoulders ) Topped with a bit of Parmesan cheese. ...
I didn't have that problem with the hocks but most near everything else these day is ridiculious. Oxtail for soup, hell you can buy prime rib cheaper, and don't get me started on chicken wings! All the rich folks have found out what can be produced with tender loving care from all those 'junk"...
making disneyturkeylegs. Recipe says 1 tsp prague. prague jar says """do not use more than recommended"""""" and it says 1 tsp for 5# meat. I only have 2.4# should I cut entire recipe in half or just drop the prague amount....or not worry about it?
Nice! I have experienced the turkeylegs at Disney, amazing! My wife is not a fan of turkeylegs, she's had them at fairs and such but not at Disney. I know I'll like em, but do ya think that yours will stand up to the Disneylegs? Not putting your cooking down at all, just wondering how you...
We recently took the family to Disney. Don't ask how much it costs. Just check your gold card and brain at the gate and don't worry about it...
One of the things we walked away with was the understanding of what a perfect Turkey Leg should look and taste like. I'f you've not had one then I...
What re
What recipe are you using for your cure? That can make a difference, if it's a brine (liquid). If it's a dry rub cure then stick to the 1 teaspoon per five pounds, in which case you'd need to weigh out the proper amount of cure for the weight of meat you are curing. And since you are...
I used Amazing Ribs Disney brine and Cajun Shake. The Chicken was brined in Mad Hunky Poultry Brine and Chef Merito Chicken Seasoning.
The turkeylegs started like this
...and ended like this
...so I headed outside
Dusted and on the 22" WSM with a direct fire. No water pan...
I...
Recently at Disney, I saw smoked turkeylegs for $9, I bought 4 for $5 at home, seasoned and now on smoker. Let's see how good I am. Also doing first fatty.
Planning on smoking 18 legs this weekend for a 30 days until Disney going away event. Has anyone else tried this recipe? This will be my first time with turkeylegs but this recipe sounds great!
Rather than Google them, check out some that have been posted on SMF!

Grouse, I missed that you wanted to do some Cured and cold smoked. While I have never cold smoked poultry, this recipe from Viper, although hot smoked, is popular and you will find adding adding 1T Cure #1 per gallon of my brine will add some great flavor as well. Sounds like an interesting...
I've been wanting to try these for a while, and finally found some turkeylegs on sale. It's odd; around here you can find whole turkeys and breasts everywhere, but hardly ever wings or legs. I wonder where they go?
Anyway, they came out great! I haven't been to Disneyland in years, not since...
Here is an old Recipe from Viper. He says they are real close to the DisneyLegs...JJ
SMOKED TURKEYLEGS close to Disney Style
The brine:
2 cups tender quick salt
1 cups brown sugar
2 tbsp. onion powder
2 tbsp. garlic powder
4 bay leaves
2 gallons water
6 turkeylegs [totally submerged in...
That i can do. the smoker is cedar, and i have plenty of berries. I will give that a go. I also plan on a orange terriyaki brine.
Thank you. I plan on smoking them and then finishing them off till IT hits temp in my traeger. If my new propane burner comes, I will try and bump up the heat in...
They do not use ostrich in place of turkey. Between their Food Safety and Health Team, truth in menu regulation and the dietary needs they take care of, they would not do anything like that. Besides it is cheaper to use turkey over ostrich anyways.
They are cured then smoked by and outside...
I heard Disney has resorted using ostrich legs, just something I heard NO CONFIRMATION on it though. It been a while since I have smoked turkeylegs. However the last time I smoked them I injected my legs with the same injection I used to deep fry my turkey's . Very flavorful . I like The idea...
