My rig is older than yours so it doesn't have the heat shield like yours does.

I use a MB 30" vertical propane smoker.
I tossed the OEM chip pan and use a 10" CI skillet.
It is raised above the burner by about 1".
I use wood chunks (not soaked)
I typically will run the heat up to get to TBS then adjust to the desired temp.
That takes about 30 to 40 minutes to...
I agree with Motocrash.
It's what I do in my MB 30" vertical smoker.
Make sure you find a way to elevate you CI pan above the burner.
I drilled holes in my CI pan and used nuts and bolts make adjustable legs.

I usually crank mine up to higher temp to get smoke going then adjust the temp back to where I want it.
Send some pics of your rigs setup that might help with others response.

I put the ribs in the offset for 2.5 hours unwrapped.
After that I foiled them in apple cider mixture (apple cider, apple jelly (melted) honey, brown sugar and some of the rub) for 1 hour.
Let them rest till company came over then grilled on the gasser while basting with barbecue sauce for...
