The chip box on my Pit Boss propane smoker is way too hot. chips quickly start producing heavy white smoke then soon are in flames. This smoker has two burners. One for the chip box and one for the smoker itself. The main burner is adjustable and does a good job of managing the temperature. The small burner for the chips is always on but it is just too hot. I have a amnps tray which I like but the only place to put it that works is on the bottom rack. If I put it any lower it gets too hot and burns up in three hours. I tried using nails to block half the holes but it seemed to only make the open holes burn hotter.

I tried using a cast iron skillet in place of the chip tray but it wasn't that great of an improvement and the only way to add chips to it was to remove the bottom rack and what ever is cooking on it.

Any other ideas?

don't use chips try chunks instead, it takes a lot more to catch them on fire

Hi BG,
Can you send some more pics of the burner set up?
Is there a way to intercept the gas line to the chip burner with a regulator?
I agree on using chunks vs. chips.

I will have to investigate the plumbing, but both burners are controlled by one knob. chunks won't fit through the opening for the chip tray but I have thought of getting small logs and crosscutting them about an inch thick.

If you put chunks in, only use 1... ONE chunk.... it takes 2 pieces of wood to build a fire.... You will have no problems..
Put a needle valve in the line after the regulator.. then you will be able to plug a lot of holes....
