I really haven't done a lot of pickling this year. And this morning I got to thinking about cauliflower. Soooo...

Basic pickling brine.
50/50 water and vinegar
2 tbs pickling salt
Bring this to boil.
In jar put:
1 tsp dried minced onion.
1/2 tsp pickling spice
1/2 tsp dill seed
1/2 tsp dried dill.
fresh dill.
Pack jars and add hot brine.
Vacuum seal.

It looks good. I've never had pickled cauliflower before. What does it taste like/texture?

The texture stays pretty much the same. A tad softer. But not by much. The taste is kind of like the cauliflower in giardiniera.
